Serves 4 Italian Beef Stew A wonderful Italian slow cooked beef stew with potatoes, celery, carrots, and plum tomatoes, slow cooked to perfection. Ingredients: 2 ½ lbs. ) can whole plum tomatoes, with juiced 1 cup of water Directions: Season the beef stew meat with salt and pepper. Heat oil in a large skillet over medium-heat, brown the stew beef. Add the onions and garlic and cook until tender. In a slow cooker, add the meat, onion, garlic, celery, potatoes, carrots, plum tomatoes, water, oregano, basil, salt and pepper.

In a large bowl, add the flour and coat the steak pieces, shaking off excess. Add the steaks and onions to the skillet; cook and brown, turning the steak once. Pour diced tomatoes over steak, sprinkle with red pepper flakes, basil, parsley and garlic powder. Combine dry soup and water, then pour into skillet and stir to get brown bits; pour over tomatoes in the slow cooker. Gently stir so liquid gets to the rice.

Cover and cook on low for 3-4 hours. Beat the cream cheese and soup together, until blended. Stir in the mushrooms and pour the mixture over the chicken. Add the broccoli and cook for about 1 more hour. About 15-20 minutes before chicken/broccoli is cooked, bring a large pot of salted water to a boil, cook the pasta according to package directions. Serve the chicken sauce over the cooked linguini.
